Weekly Recipe – Stuffed Baked Apples

Stuffed Baked Apples

Stuffed Baked Apples
Serves 2
Prep time: 15 minutes
Cook time: 30 – 40 minutes

Tired of chocolate? Okay who am I kidding, I never tire of chocolate.  I do, however, occasionally want a dessert that is delicious, filling and doesn’t leave me feeling guilty in the morning.  Stuffed baked apples are the answer!  It is like a piece of apple pie without the butter laden crust.  Chopped mixed dried fruit and nuts amp up the texture and a small scoop of vanilla ice cream provides a little extra sin with all the delight!

  • 2 large apples, granny smith, cored
  • 1/4 cup of chopped mixed dried fruit
  • 1/4 cup chopped pecans
  • 1 1/2 tsp of chia seeds
  • 1 1/2 tsp of splenda brown sugar
  • 1/4 wedge of lemon
  • 1/2 cup of vanilla ice cream

Preheat oven to 350 degrees F.

Lightly coat a small glass baking dish with non-stick spray.

Rub lemon juice over cored apples. Set in baking dish.

Mix together dried fruit, pecans, and brown sugar until blended well.  Spoon equally into each cored apple.

Cover apples with foil and bake for 30 to 40 minutes.

Enjoy with a 1/4 cup of vanilla ice cream per apple!

    That’s such a nice idea! I was talking about stuffed peppers and stuff just yesterday with one of my friends, will certainly try this out when I have all the ingredients at hand. I’m thinking a small twist by adding in some cinnamon as well 🙂

    Thanks Molly – it’s a great dessert for cold winter nights. I still sometimes use regular brown sugar, too. At least until I finally finish what I have left. 🙂

    Thank you Mateja, it had also been a long time since I last had baked apples. It seems as though we forget they can be baked whole instead of always used as a filling…although I do love a tart apple pie!

    Thank you! I feel this is almost one of those recipes you can pretty much stuff anything sweet in the center and it come out delicious!
