Fooducate - Nutrition Education While You Shop

I think…err believe that I eat healthy, as do most of us.  And as do most, there is the occasion to underestimate just how much we eat. So, it stands to reason that there is a vast underestimation of how healthy we eat as well. Until… FOODUCATE!   Fooducate is an application designed to ease […]

Healthy Recipe – Tomato, Basil & Mint Vinaigrette

March 15, 2012 By Tabitha Paculba 2 Comments

A few weeks ago, I met up with former co-workers for a life catch-up session. It was great! I really miss working with those ladies and it was wonderful to hear about the changes that had transpired over the last year. We met over brunch (my favorite meal) and I ordered a black walnut kale salad. I liked it except for the vinaigrette. For me, the vinaigrette did not complement the kale.

Recipe – Kale, Black Bean, and Corn Moons with Lime Cream Dip

March 1, 2012 By Tabitha Paculba 6 Comments

These moons are based on the edamame quesadilla recipe, except I substituted fresh chopped kale for the edamame. Kale boosts the fiber content and makes it possible to enjoy two as a light lunch.

Ahhh comfort food. We all have our favorites. For me, it is more than just mac and cheese. Feed me enchiladas or a casserole! Of all the casseroles my mother baked, I distinctly remembered one that had asparagus and was delicious!
