Healthy Recipe – Minted Honeydew Cooler

Minted Honeydew CoolerPrep time: 10 minute
Blend time: 5 minutes
Chill Time: 1 to 2 hours
Serves: 2

 

On hot humid summer days, sometimes a gal just needs a drink!  This refreshing concoction not only refreshes but smells great, too!

Drink this recipe in the morning to get your day going, after your holiday 10k, or in the evening when you need a second wind after a sun-filled day.

 

*************************************

  • 10 medium sized mint leaves (save the smaller ones for garnish)
  • 1 cup English Cucumber, chopped
  • 2 cup Honeydew Melon, chopped
  • Lime Juice, Fresh (1 lime yields) to taste
  • Optional – Honey 1 tbsp

Place first three ingredients (and honey if adding) in a blender and puree until smooth.

Add fresh squeezed lime juice by teaspoons to taste.

Chill for 1 to 2 hours and mix before serving.

Enjoy.
