Recipe – Cardamom & Rosemary Roasted Nuts

Shown: Mixed walnuts and pecans.

Prep time: 5 minutes
Cook time: 10 minutes

I’ve used this quick dressing on pecans and walnuts with rave results.  This is a great quick dish for unexpected guests or as an appetizer for larger dinner parties.  Toss them in your salad for added protein or enjoy them with diced parmesan (yummy!).  It is also a great way to use left over nuts from holiday baking.

Oven: 350*F

  • 1 1/2 tbsp olive oil
  • 1 1/2 tbsp maple syrup
  • 2 tbsp cardamom
  • 1/2 tsp cayenne pepper
  • 1/4 tsp paprika
  • 1/4 tsp ground himalayan salt
  • 1 tbsp chopped fresh rosemary

Mix above ingredients in a bowl until well blended.   Hint: Make it mess free by measuring all ingredients into a zip lock bag.

Add 3 cups of walnut pieces or pecans.  Mix well.

On a foil lined baking sheet, spread nuts in an even layer and bake for 10 to 12 minutes.

Remove from oven and cool completely before serving.

Enjoy!

    These look great I’m going to try them. So much better than unhealthy snacks when you want something interesting and don’t want to feel ‘deprived’ of comfort food altogether! Sweet.
